A sprig of parsley

from Florisbella's cookbook

"Parsley is most often sprinkled on top as a garnish, lending decorative flair to any meal"

I have been sitting in my favorite armchair, with the fire crackling in the fireplace knitting a new scarf for the cold weather. Cold indeed! It has been snowing since this morning and it is now time for supper... but I have no will to go outside and pluck winter crops with such cold! I shall have to settle for what is stored in the pantry... sigh. I think I still have some freshwater fish fillets that I bought yesterday though? And... oh I can use some leaves from the lovely parsley plant I bought from the Gaffer in Hobbiton. Little Parsley took well to staying indoors, I am happy to say! So I went and looked all I needed:

2 fish fillets

vegetable oil

my trusty bag of seasoning

15 green olives, quartered

1 onion

1 tsp of capers (these I bought from a dwarf merchant who came from the East)

apple juice

a sprig of parsley

2 small taters I had left

I quickly rubbed the fillets with oil and powdered seasoning, then chopped the onion finely, as well as the parsley leaves. Then I put the fillets to fry for one or two minutes each side. After that I mixed the onion with the olives and parsley, seasoned that too, dressed with oil then sprinkled both fish and salad with the apple juice. Not to forget the taters! Those I roasted of course, as a side dish.

The simplicity of the dish takes nothing away from its flavor let me tell you, and now I can return to knit my scarf while outside the snow is still falling!
